The fourth edition of the Week of Italian Cuisine in the World, scheduled from 18 to 24 November 2019, will see food education and the culture of taste as main themes this year. The fourth Week of Italian Cuisine in the World began yesterday, November 18th, promoted by the Ministry of Foreign Affairs and dedicated to the promotion of quality Italian cuisine and food products abroad.

The enhancement of the Italian food and wine heritage is the main purpose of the ITA0039 I 100% Italian Taste Certification protocol, conceived and developed by ASACERT in agreement with Coldiretti and Filiera Agricola Italiana, supported by the Ministry of Agriculture and ANRA (National Risk Manager Association and Company Insurance), to finally make available to the consumer and the large sector of Italian restaurant sector abroad, an innovative tool in its efficacy and integrity, for all those who wish to protect themselves against the increasingly widespread and harmful fakes against the our unparalleled products and raw materials.

According to studies, ours appears to be the second largest global cuisine after China, showing a higher penetration in the United States, England, Brazil and India.

Unfortunately, the Italian Sounding phenomenon is opposed to the popularity of Italian food: worldwide, the annual turnover of the “Italian fake” is estimated at around 54 billion euros (147 million a day), over the double of the current value of Italian exports of food products (23 billion € ).

What sounds Italian, but in fact it is not, represents a damage not only for producers and consumers, but also for many honest restaurateurs who have created, with many difficulties, disentangling themselves in a jungle of fakes, 100% Italian realities and that today, thanks to ITA0039 certification, can finally be recognized as authentic Italians.

ITA0039 certification | 100% Italian Taste is active all over the world and is spreading rapidly in many countries, right because of its recognized uniqueness: there is currently no other similar acknowledgment, issued by a professional and accredited certification body, such as ASACERT.

To become certified, the restaurant owner faces a process that is simple in its dynamic and extremely effective: following the request, a qualified auditor personally goes to the restaurant and checks the compliance with the criteria, inspecting products, wine list, menu and staff.

At the same time, the auditor verifies the compliance with the new rules on the use of plastic and on the virtuous and responsible use of recyclable materials.

Then follows a more in-depth analytical phase, concerning the labels and findings collected and, at the end of the audit, the score achieved is calculated, determining the possibility of being certified or not. In case of a positive outcome, the restaurateur receives a certificate and can start using the exclusive ITA0039 mark, in its Platinum, Gold, Silver or Bronze versions, depending on the score achieved.

At the end of the certification process, the restaurant will be included by right in the application that ASACERT is developing. An additional guarantee instrument for the consumer, usable both from app and PC, where it is possible to consult the list of certified restaurants, with their menus and the raw materials used, going up the chain in total transparency, up to the producer.
