He was born in Pavia, the rice capital of Italy. With its 85,000 hectares planted with rice paddies and the 4 million 865 thousand quintals of total production, Pavia is the province with the highest percentage of rice cultivation in Italy and the leading European producer. Hence the idea of including risottos among the restaurant’s dishes, using the famous Carnaroli rice, typical just of the Pavia area.

Walter, with passion and mastery, conveys authentic Italian cuisine in its most traditional expressions. “As Italians abroad, we feel a deep sense of responsibility in being bearers of our precious traditions, acting as ambassadors of what has made our country famous and renowned all over the world,” says the Chef.

We let him tell us his story, what it means to work abroad and how Italian cuisine is perceived.

What city, country are you in today?

We are in Denmark, in the majestic city of Roskilde, former capital of the Danish Kingdom. Founded way back in the 10th century by the Vikings, it was the first capital of the Kingdom of Denmark. Tell us your story: how the idea for the restaurant came about.

Our restaurant, Carnevale Garè, is the result of an idea inspired by our family name. Carnevale, besides being our last name, evokes the most colorful and lively Italian festival, and from here we decided to create a unique combination of the Italian tradition of carnival masks and our identity. The restaurant is set up in a rustic style, reflecting the authentic atmosphere of a classic Italian trattoria, where our guests can enjoy delicious wholesome dishes, prepared with fresh ingredients of Italian origin. We want to offer a complete Italian experience to diners. The decor features checkered tablecloths, flowers and candles on the tables, cozy colors and warm lighting. Our goal is not to create a pretentious or snobby restaurant, but a place where you can breathe true Italian hospitality, at all times. Here you can enjoy excellent food, accompanied by fine wines, immersed in a warm and welcoming atmosphere, all framed by the traditional Italian carnival masks that adorn the walls of the restaurant.

What kind of cooking do you do?

Our specialty of Italian cuisine is undoubtedly pizza. We have become famous for this very thing, thanks to our pizza prepared with sourdough and a leavening of at least 48 hours, using only products imported from Italy.

Is there any advice you would give to tourists choosing an Italian restaurant abroad?

It is essential to ensure that our restaurant is authentically Italian, as Italian cuisine, our brands and our products are constantly “under attack.” There is always the risk of imitations and counterfeits, sometimes even harmful to health. This is why certifying with ITA0039 is a fundamental step to affirm, thanks to a third and impartial body, one’s authenticity and wholesomeness. An Italian who has chosen this profession out of passion will use only the real products from the Bel Paese: genuine and high quality products.
